Ingredients
Rice Paper Rolls
- 8 rice paper wrappers
- 1 carrot, julienned
- 1/2 red bell pepper, thinly sliced
- 1/2 yellow bell pepper, thinly sliced
- 1/2 cucumber, julienned
- 1 avocado, sliced
- 1 cup shredded red cabbage
- 1 cup lettuce or mixed greens
- 1/4 cup fresh cilantro
- 1/4 cup fresh mint
- 1/4 cup cooked rice noodles, optional
Peanut Dipping Sauce
- 1/4 cup creamy peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp maple syrup
- 1 tsp sesame oil
- 1–2 tbsp warm water
- 1/2 tsp grated fresh ginger
Instructions
- Prepare Vegetables: Wash all vegetables thoroughly. Julienne the carrot and cucumber into thin strips, and thinly slice the red and yellow bell peppers. Shred the red cabbage, slice the avocado, and pick fresh cilantro and mint leaves.
- Soften Rice Paper: Soak one rice paper wrapper in warm water for about 10–15 seconds until it becomes pliable but not too soft. This will make it easier to roll without tearing.
- Assemble Rolls: Lay the softened rice paper on a clean, damp surface. Place a layer of lettuce or mixed greens in the center, then add shredded cabbage, julienned carrot, sliced bell peppers, cucumber, avocado slices, fresh herbs, and optionally cooked rice noodles.
- Roll the Wrapper: Fold the bottom edge of the rice paper over the filling, then fold in the sides snugly. Roll it up tightly like a burrito to encase all the fillings securely.
- Repeat Rolling: Continue the process with the remaining rice paper wrappers and vegetables until all are used.
- Make Peanut Dipping Sauce: In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, sesame oil, and grated fresh ginger. Add warm water one tablespoon at a time to reach your desired dipping consistency.
- Serve: Present the freshly rolled veggie rice paper rolls immediately with the peanut dipping sauce on the side for dipping.
Notes
- Keep the assembled rolls covered with a damp kitchen towel to prevent them from drying out before serving.
- Avoid soaking the rice papers for too long as they will become overly soft and difficult to handle.
- For additional protein, add tofu, edamame, or cooked rice noodles inside the rolls.
- These rolls are best enjoyed fresh on the day they are made to preserve crispness.
