Description
A cozy and comforting baked French toast casserole featuring the warm flavors of pumpkin spice and maple syrup. This make-ahead dish is perfect for a delicious fall brunch, offering a soft, custardy center and a golden, puffed top that delights any breakfast table.
Ingredients
Bread
- 6 cups cubed brioche or challah bread
Custard Mixture
- 4 large eggs
- 1 cup milk
- ½ cup pumpkin puree
- ¼ cup maple syrup
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
Instructions
- Prepare Custard Mixture: In a large bowl, whisk together the eggs, milk, pumpkin puree, maple syrup, cinnamon, nutmeg, and vanilla extract until smooth and fully combined.
- Soak the Bread: Place the cubed brioche or challah bread into a greased baking dish. Pour the custard mixture evenly over the bread cubes, making sure all pieces are well coated. Let the mixture soak for 20 minutes to allow the bread to absorb the custard.
- Bake the Casserole: Preheat your oven to 350°F (175°C). Place the baking dish in the oven and bake uncovered for 40 minutes, or until the casserole is puffed, set in the center, and golden brown on top.
Notes
- For added texture and flavor, sprinkle a streusel topping made of butter, brown sugar, and pecans before baking.
- This casserole can be assembled the night before; cover and refrigerate, then bake fresh in the morning for a hassle-free brunch.
