Description

Power Breakfast Potato Boat is a hearty and satisfying breakfast meal featuring tender baked russet potatoes loaded with fluffy scrambled eggs, crispy bacon, melted cheddar cheese, and fresh vegetables. This protein-packed dish combines comforting flavors and textures, making it ideal for busy mornings, weekend brunch, or any time you need a filling and delicious start to your day.

Ingredients

Potatoes

  • 2 large russet potatoes

Egg Mixture

  • 4 large eggs
  • ¼ cup milk
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Fillings

  • ½ cup shredded cheddar cheese, divided
  • 4 slices bacon, cooked and crumbled
  • ¼ cup diced red bell pepper
  • 2 tablespoons chopped green onions
  • 1 tablespoon butter

Garnish (Optional)

  • 2 tablespoons sour cream
  • Fresh parsley

Instructions

  1. Preheat and Prepare Potatoes: Preheat oven to 400°F (200°C). Wash and dry the russet potatoes thoroughly, then pierce each potato several times with a fork to allow steam to escape during baking.
  2. Bake Potatoes: Place the pierced potatoes on a baking sheet and bake for 45–55 minutes until they are fork-tender when tested. Remove from oven and allow to cool slightly.
  3. Prepare Potato Boats: Once cooled enough to handle, cut each potato in half lengthwise. Carefully scoop out most of the potato flesh, leaving about a thin layer around the edges to maintain a sturdy shell for filling.
  4. Sauté Vegetables: In a skillet over medium heat, melt the butter. Add diced red bell pepper and cook for 2–3 minutes until softened but still vibrant.
  5. Scramble Eggs: In a bowl, whisk together eggs, milk, garlic powder, salt, and black pepper. Pour this mixture into the skillet with the softened peppers and gently cook while stirring constantly until the eggs are softly scrambled and cooked through.
  6. Mix Filling: Stir the cooked potato flesh, half of the shredded cheddar cheese, crumbled bacon, and chopped green onions into the scrambled eggs until well combined.
  7. Stuff Potato Shells: Spoon the egg and potato mixture evenly into each hollowed potato shell and arrange them back on the baking sheet.
  8. Melt Cheese: Sprinkle the remaining cheddar cheese over the tops of each stuffed potato. Return the baking sheet to the oven and bake for an additional 8–10 minutes until the cheese is melted and bubbly.
  9. Garnish and Serve: Remove from oven and garnish with fresh parsley and optional sour cream before serving for an extra creamy touch.

Notes

  • Bake potatoes ahead of time to speed up breakfast preparation.
  • Substitute turkey bacon or cooked sausage for bacon if preferred.
  • Add extra vegetables such as spinach, mushrooms, or tomatoes for added nutrition and flavor.
  • Use alternative cheeses like mozzarella, Monterey Jack, or pepper jack for a different flavor profile.
  • For a vegetarian version, omit bacon and increase vegetables accordingly.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat thoroughly before serving.
