Pineapple Shrimp Skewers combine succulent shrimp with sweet pineapple chunks, colorful bell peppers, and red onion all glazed in a tangy honey-lime BBQ sauce. Ingredients
For the Skewers:
- 1½ lbs large shrimp, peeled and deveined
- 2 cups fresh pineapple chunks
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- ½ small red onion, cut into chunks
- 8 wooden or metal skewers
For the Glaze:
- ¼ cup BBQ sauce
- 2 tbsp pineapple juice
- 1 tbsp honey
- 1 tbsp fresh lime juice
- 1 tbsp olive oil
- 1 tsp garlic, minced
- ½ tsp smoked paprika
- ¼ tsp salt
- ¼ tsp black pepper
Instructions
- Soak Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Prepare Glaze: Whisk together BBQ sauce, pineapple juice, honey, lime juice, olive oil, minced garlic, smoked paprika, salt, and black pepper until well combined.
- Reserve Glaze: Set aside about ¼ cup of the glaze for brushing the skewers during grilling.
- Marinate Shrimp: Place shrimp in a bowl and toss with half of the remaining glaze to coat evenly.
- Assemble Skewers: Thread shrimp, pineapple chunks, red and yellow bell peppers, and red onion onto the skewers, alternating ingredients for a colorful presentation.
- Preheat Grill: Heat grill to medium-high and lightly oil the grates to prevent sticking.
- Grill Skewers: Place the skewers on the grill and cook for 2–3 minutes per side. Turn carefully until shrimp are opaque and cooked through.
- Glaze and Finish: During the final minute of grilling, brush the reserved glaze onto the skewers to add extra flavor and shine.
- Serve: Remove from grill and serve immediately with lime wedges and optional fresh cilantro garnish.
