Description

Pina Colada Molded Salad is a creamy, tropical dessert salad inspired by the classic piña colada flavor. Made with pineapple, coconut, whipped topping, and a smooth gelatin base, this chilled molded treat is sweet, refreshing, and perfect for summer parties, potlucks, holiday gatherings, and family celebrations.

Ingredients

Gelatin Base

  • 1 package (3 oz) pineapple-flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold pineapple juice

Salad Mixture

  • 1 can (8 oz) crushed pineapple, well drained
  • 1 cup sweetened coconut flakes
  • 1 cup whipped topping, thawed
  • 1/2 cup sour cream
  • 1/2 teaspoon coconut extract
  • 1/2 cup mini marshmallows (optional)

Garnish

  • Fresh pineapple chunks
  • Maraschino cherries

Instructions

  1. Prepare the Mold: Lightly grease a 4–5 cup gelatin mold or serving dish to ensure easy unmolding later.
  2. Dissolve Gelatin: In a large bowl, dissolve the pineapple-flavored gelatin completely in 1 cup of boiling water, stirring continuously for about 2 minutes until fully dissolved.
  3. Add Pineapple Juice: Stir in 1/2 cup of cold pineapple juice into the gelatin mixture.
  4. Chill Gelatin: Refrigerate the mixture for 45–60 minutes until it becomes slightly thickened but is not fully set.
  5. Mix Creamy Ingredients: In a separate bowl, combine 1/2 cup sour cream with 1/2 teaspoon coconut extract until smooth and well blended.
  6. Fold in Other Ingredients: Gently fold in 1 cup whipped topping, well-drained crushed pineapple, 1 cup sweetened coconut flakes, and optional 1/2 cup mini marshmallows into the sour cream mixture to create a creamy, textured filling.
  7. Combine with Gelatin: Carefully fold the creamy mixture into the slightly thickened gelatin until evenly combined.
  8. Mold and Chill: Pour the combined mixture into the prepared mold, cover it, and refrigerate for at least 4 hours or until fully set.
  9. Unmold and Garnish: To serve, briefly dip the outside of the mold in warm water for a few seconds, place a serving plate over the mold, and carefully invert. Garnish the molded salad with fresh pineapple chunks and maraschino cherries before serving.

Notes

  • Drain the pineapple well: Excess juice can prevent the gelatin from setting properly.
  • Alcohol-free: Uses pineapple juice and coconut extract instead of rum, making it suitable for all ages.
  • Texture variations: Add mini marshmallows for a sweeter, fluffier texture or chopped pecans for crunch.
  • Easy presentation: Serve in a glass bowl if you prefer not to unmold the salad.
  • Make ahead: Prepare a day in advance and keep refrigerated until serving.
  • Storage: Cover and refrigerate for up to 3 days. Freezing is not recommended as texture may change.
