Instructions

  3. Add broth and herbs: Pour in 4 cups of vegetable broth and sprinkle 1 teaspoon of dried thyme over the vegetables. Stir to combine.
  4. Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 20 minutes, until all vegetables are tender and flavors have melded together.
  5. Blend the soup: Use an immersion blender to puree part or all of the soup directly in the pot, creating a creamy texture while still retaining some vegetable chunks for body.
