Instructions

- Simmer the soup: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 20 minutes, until all vegetables are tender and flavors have melded together.
- Blend the soup: Use an immersion blender to puree part or all of the soup directly in the pot, creating a creamy texture while still retaining some vegetable chunks for body.
- Incorporate cream: Stir in 1 cup of heavy cream or half-and-half carefully, and heat the soup gently without allowing it to boil, to avoid curdling.
- Season the soup: Taste the soup, then add salt and freshly ground black pepper as needed to balance the flavors.
