Instructions
- Heat the olive oil: In a large pot over medium-high heat, heat 1 tablespoon of olive oil to prepare for cooking the beef and vegetables.
- Brown the ground beef: Add 1 pound of lean ground beef to the pot and cook until browned, breaking it apart with a spoon as it cooks.
- Sauté mushrooms and onion: Stir in 8 ounces of sliced mushrooms and 1 diced small onion into the pot. Cook until softened and fragrant, about 4-5 minutes.
- Add garlic: Add 3 minced garlic cloves and cook for 30 seconds until aromatic, being careful not to burn the garlic.
- Add broth and seasonings: Pour in 4 cups of beef broth, then stir in 1 tablespoon Worcestershire sauce, 1 teaspoon Dijon mustard, 1 teaspoon paprika, 1 teaspoon salt, and ½ teaspoon black pepper.
- Add egg noodles and boil: Add 8 ounces of egg noodles to the pot. Bring the mixture to a boil over high heat.
- Simmer until noodles are tender: Reduce the heat to medium-low and simmer uncovered for 10–12 minutes, stirring occasionally, until the noodles are cooked through.
- Stir in sour cream: Remove the pot from heat and stir in 1 cup of sour cream to create a creamy sauce. Mix well until fully combined.
- Garnish and serve: Sprinkle 2 tablespoons of chopped fresh parsley on top and serve the stroganoff immediately for best flavor and texture.
