Description

This One-Pot Creamy Beef Stroganoff is a comforting and hearty dish featuring tender ground beef, mushrooms, and egg noodles cooked together in a rich, creamy sauce. Perfect for a family dinner, this recipe combines simple ingredients into a flavorful meal with minimal cleanup.

Ingredients

Main Ingredients

  • 1 lb lean ground beef
  • 1 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 8 oz egg noodles
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup sour cream
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Heat the olive oil: In a large pot over medium-high heat, heat 1 tablespoon of olive oil to prepare for cooking the beef and vegetables.
  2. Brown the ground beef: Add 1 pound of lean ground beef to the pot and cook until browned, breaking it apart with a spoon as it cooks.
  3. Sauté mushrooms and onion: Stir in 8 ounces of sliced mushrooms and 1 diced small onion into the pot. Cook until softened and fragrant, about 4-5 minutes.
  4. Add garlic: Add 3 minced garlic cloves and cook for 30 seconds until aromatic, being careful not to burn the garlic.
  5. Add broth and seasonings: Pour in 4 cups of beef broth, then stir in 1 tablespoon Worcestershire sauce, 1 teaspoon Dijon mustard, 1 teaspoon paprika, 1 teaspoon salt, and ½ teaspoon black pepper.
  6. Add egg noodles and boil: Add 8 ounces of egg noodles to the pot. Bring the mixture to a boil over high heat.
  7. Simmer until noodles are tender: Reduce the heat to medium-low and simmer uncovered for 10–12 minutes, stirring occasionally, until the noodles are cooked through.
  8. Stir in sour cream: Remove the pot from heat and stir in 1 cup of sour cream to create a creamy sauce. Mix well until fully combined.
  9. Garnish and serve: Sprinkle 2 tablespoons of chopped fresh parsley on top and serve the stroganoff immediately for best flavor and texture.

Notes

  • Use ground turkey instead of ground beef for a lighter variation.
  • Add extra mushrooms for a more intense mushroom flavor.
  • Be sure to stir in the sour cream off the heat to prevent curdling and maintain creaminess.
