Ingredients
Sausage
- 500 g chicken or turkey sausage, sliced
Vegetables
- 2 bell peppers, sliced
- 2 zucchini, sliced
- 1 red onion, cut into wedges
- 2 cups broccoli florets
- 250 g baby potatoes, halved
Seasonings & Others
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
- 1 tbsp fresh lemon juice
- Fresh parsley, for garnish
Instructions
- Preheat oven: Preheat your oven to 220°C (428°F) to prepare for roasting the vegetables and sausage.
- Prepare potatoes: Place the halved baby potatoes on a large sheet pan. Toss them with half of the olive oil, smoked paprika, salt, and black pepper to coat evenly. Roast for 15 minutes to start cooking the densest vegetables first.
- Add remaining ingredients: After 15 minutes, add the sliced sausage, bell peppers, zucchini, red onion wedges, and broccoli florets to the sheet pan with the potatoes.
- Season and toss: Drizzle the remaining olive oil over the mixture, then sprinkle the Italian seasoning and garlic powder evenly. Toss everything together so the sausage and vegetables are well coated with seasonings and oil.
- Roast again: Return the sheet pan to the oven and continue roasting for 20 to 25 minutes. Be sure to stir the vegetables and sausage halfway through this roasting period to ensure even cooking and browning.
- Finish and serve: Once the sausage is cooked through and the vegetables are tender and slightly caramelized, remove the pan from the oven. Drizzle fresh lemon juice over the dish, garnish with fresh parsley, and serve warm.
