Ingredients
For the Crust
- 1 cup raw almonds
- 1/2 cup pitted Medjool dates
- 1/2 cup unsweetened shredded coconut

For the Filling
- 1 1/2 cups raw cashews, soaked for 4 hours and drained
- 1/2 cup full-fat coconut cream
- 1/3 cup maple syrup
- 1/4 cup fresh lemon juice
- 2 tbsp coconut oil, melted
- 1 tsp vanilla extract
- Pinch of salt

Instructions
- Prepare the muffin tin: Line a 12-cup muffin tin with paper or silicone liners to prevent sticking and make removal easier.
- Make the crust: Add almonds, dates, shredded coconut, melted coconut oil, vanilla, and salt to a food processor. Process until the mixture is sticky and crumbly, forming a textured base for the crust.
- Form the crust: Evenly divide the crust mixture between the muffin liners and press firmly into the bottom to create an even and compact crust layer.
- Prepare the filling: Combine the soaked and drained cashews, coconut cream, maple syrup, lemon juice, coconut oil, vanilla, and salt in a high-speed blender.
- Blend the filling: Blend the ingredients until completely smooth and creamy, scraping down the sides as needed to ensure a perfectly blended filling.
- Assemble the cheesecakes: Spoon the creamy filling over each crust evenly and smooth out the tops for uniform mini cheesecakes.
- Refrigerate or freeze: Refrigerate the cheesecakes for at least 4 hours to set, or freeze them for 2–3 hours if you prefer a firmer texture.
