Instructions

- Add spices and garlic: Stir in the minced garlic along with cumin, coriander, paprika, turmeric, cinnamon, and optional cayenne pepper. Cook for 30 to 60 seconds until the mixture becomes fragrant, enhancing the flavor base.
- Combine lentils and liquids: Mix in the rinsed lentils, diced tomatoes, vegetable broth, diced zucchini, salt, and black pepper. These ingredients create the core body of the soup.
- Bring to boil and simmer: Increase the heat to bring the soup to a boil. Then reduce the heat to low, cover the pot, and let it simmer gently for 30 to 35 minutes until the lentils are tender.
