Pasta

  • 200 g spaghetti

Egg Mixture

  • 2 large eggs
  • 1 egg yolk
  • 40 g grated Parmesan cheese
  • 1 tablespoon white miso paste
  • Black pepper, to taste

  • 100 g pancetta or bacon, diced
  • 1 garlic clove, minced


Instructions

  1. Cook Pasta: Cook spaghetti in salted boiling water until al dente, about 8-10 minutes. Reserve 1/2 cup of pasta water before draining to help create the sauce later.
  2. Prepare Egg Mixture: In a bowl, whisk together the eggs, egg yolk, grated Parmesan, white miso paste, and freshly cracked black pepper until combined and smooth.
  3. Cook Pancetta and Garlic: In a pan over medium heat, cook the diced pancetta or bacon until it turns crispy and releases its fat. Add the minced garlic and sauté briefly for about 30 seconds to 1 minute until fragrant, being careful not to burn it.
  4. Toss Pasta with Pancetta: Add the drained spaghetti directly into the pan with the pancetta and garlic. Toss well to coat the pasta in the rendered fat.
  5. Create the Sauce Off Heat: Remove the pan from heat and quickly pour in the egg and miso mixture. Toss vigorously to coat the pasta evenly, adding the reserved pasta water in small amounts as needed to achieve a silky, creamy sauce without scrambling the eggs.
  6. Serve Immediately: Plate the pasta and garnish with extra Parmesan cheese and freshly cracked black pepper. Serve hot for the best texture and flavor.
