Ingredients
Beef and Marinade
- 1½ pounds flank steak or skirt steak
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon black pepper
Toppings and Serving
- 12 small corn tortillas
- 1 cup chopped white onion
- ½ cup chopped fresh cilantro
- Lime wedges, for serving
Instructions
- Prepare the marinade: In a small bowl, combine the olive oil with chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Mix well to create a uniform seasoning paste.
- Season the steak: Rub the seasoning mixture evenly over the flank or skirt steak, ensuring all surfaces are coated to maximize flavor absorption.
- Grill the steak: Preheat a grill to medium-high heat. Grill the steak for approximately 4–6 minutes per side, depending on thickness, until it reaches desired doneness and has nice char marks.
- Rest the meat: Remove the steak from the grill and allow it to rest for 5–10 minutes. This helps the juices redistribute and keeps the meat tender.
- Slice the steak: Carefully slice the steak thinly against the grain to ensure each bite is tender and easy to chew.
- Warm the tortillas: Heat the corn tortillas either directly on the grill or in a hot skillet until pliable and warm, about 30 seconds per side.
- Assemble the tacos: Place a few slices of beef on each tortilla. Top with chopped white onion and fresh cilantro for an authentic flavor boost.
- Serve with lime: Offer lime wedges on the side for squeezing over the tacos just before eating to add a bright, citrusy finish.
Notes
- Chicken or pork can be used as substitutes for the beef if preferred.
- Enhance flavor by adding your favorite salsa or sliced avocado as toppings.
- For the best texture and flavor, warm the tortillas immediately before serving.
