Ingredients
Beans and Broth
- 2 cups cooked white beans (or canned, drained)
- 4 cups vegetable broth
Vegetables
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped

- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Heat oil: In a pot over medium heat, warm 2 tablespoons of olive oil to prepare for sautéing the vegetables.
- Sauté vegetables: Add the chopped onion, minced garlic, and chopped carrots to the pot. Cook them while stirring occasionally until they are softened and fragrant, about 5-7 minutes.
- Add beans and broth: Pour in the cooked white beans and 4 cups of vegetable broth, stirring to combine all ingredients well.
- Season and boil: Stir in 1 teaspoon dried oregano and bring the mixture to a boil over medium-high heat.
- Simmer soup: Once boiling, reduce the heat to low and let the soup simmer gently for 15–20 minutes to allow flavors to meld and ingredients to soften further.
- Finalize seasoning: Taste the soup and season with salt and black pepper according to your preference.
