Puff Pastry and Filling
- 1 sheet puff pastry, thawed
- 1 cup fresh spinach, finely chopped
- ¾ cup crumbled feta cheese

- 1 tbsp fresh dill, chopped

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the crisps.
- Sauté Spinach: Heat the olive oil in a skillet over medium heat. Add the finely chopped spinach and sauté for 1–2 minutes until wilted. Remove from heat and allow to cool completely to avoid sogging the pastry.
- Prepare Filling: In a mixing bowl, combine the cooled spinach, crumbled feta cheese, minced garlic, chopped dill, and chopped parsley. Mix thoroughly to blend all flavors.
- Cut Puff Pastry: Roll out the thawed puff pastry on a lightly floured surface and cut it into 12 equal squares.
- Fill Pastry Squares: Place a spoonful of the spinach and feta filling in the center of each square, ensuring not to overfill to maintain easy sealing.
- Fold and Seal: Fold each square diagonally or into a preferred shape, then press the edges firmly with a fork to seal and prevent filling from leaking during baking.
- Egg Wash and Finish: Brush the tops of each sealed crisp with the beaten egg to achieve a golden, glossy finish. Optionally, sprinkle sesame seeds on top for added texture and flavor.
- Bake: Place the crisps on a baking sheet lined with parchment paper and bake in the preheated oven for 15–18 minutes until they are puffed up and golden brown.
