Ingredients

Puff Pastry and Filling

  • 1 sheet puff pastry, thawed
  • 1 cup fresh spinach, finely chopped

  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp olive oil

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the crisps.

  3. Prepare Filling: In a mixing bowl, combine the cooled spinach, crumbled feta cheese, minced garlic, chopped dill, and chopped parsley. Mix thoroughly to blend all flavors.
  4. Cut Puff Pastry: Roll out the thawed puff pastry on a lightly floured surface and cut it into 12 equal squares.
  5. Fill Pastry Squares: Place a spoonful of the spinach and feta filling in the center of each square, ensuring not to overfill to maintain easy sealing.
  6. Fold and Seal: Fold each square diagonally or into a preferred shape, then press the edges firmly with a fork to seal and prevent filling from leaking during baking.
  7. Egg Wash and Finish: Brush the tops of each sealed crisp with the beaten egg to achieve a golden, glossy finish. Optionally, sprinkle sesame seeds on top for added texture and flavor.
  8. Bake: Place the crisps on a baking sheet lined with parchment paper and bake in the preheated oven for 15–18 minutes until they are puffed up and golden brown.
