Ingredients
For the Salmon
- 4 salmon fillets
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Salad
- 6 cups mixed greens or romaine lettuce
- 1 cucumber, chopped
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
For the Dressing
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the cooking surface. Preheat your oven to 400°F (200°C) or prepare a grill by heating it to medium-high heat to ensure proper cooking of the salmon.
- Prepare the salmon. Brush each salmon fillet with olive oil and lemon juice to keep it moist and flavorful, then season evenly with dried oregano, garlic powder, paprika, salt, and black pepper for a well-rounded Mediterranean taste.
- Cook the salmon. Place the salmon in the preheated oven and bake for 12 to 15 minutes or alternatively grill the fillets for 4 to 5 minutes on each side until the salmon is opaque and flakes easily with a fork.
- Make the dressing. In a small bowl, whisk together olive oil, fresh lemon juice, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and black pepper until emulsified and smooth.
- Assemble the salad. In a large salad bowl, combine the mixed greens, chopped cucumber, halved cherry tomatoes, thinly sliced red onion, Kalamata olives, crumbled feta cheese, and chopped fresh parsley. Toss gently with half of the prepared dressing until evenly coated.
- Plate the salad and serve. Divide the dressed salad among individual plates. Top each plate with a cooked salmon fillet. Drizzle the remaining dressing over the salmon and salad just before serving to enhance the fresh flavors.
Notes
- Add avocado, chickpeas, or roasted peppers to the salad for additional textures and flavors.
- For a smoky summer twist, use grilled salmon instead of baked.
- If preparing the salad in advance, keep the dressing separate until ready to serve to maintain freshness.
- Serve with warm pita bread or crusty artisan bread for a complete and satisfying meal.
