Instructions

  4. Cook eggplant: Incorporate the cubed eggplant and cook for 5–7 minutes while stirring occasionally, allowing it to soften and start absorbing the spices.
  5. Add tomato base and chickpeas: Mix in the tomato paste, diced tomatoes, chickpeas, vegetable broth, salt, and black pepper, stirring well to combine the sauce.
