  • 1 pint cherry tomatoes, halved

  • 2 cloves garlic, minced
  • 1 lemon, thinly sliced
  • 3/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)


Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken and vegetables evenly.
  2. Prepare the Chicken: In a small bowl, mix olive oil, dried oregano, garlic powder, salt, and pepper. Rub this mixture evenly over both sides of the chicken breasts to infuse them with flavor.
  3. Assemble in Baking Dish: Place the chicken breasts in a single layer in a baking dish. Scatter the halved cherry tomatoes, Kalamata olives, sliced red onion, and minced garlic around and on top of the chicken. Lay lemon slices over the chicken breasts for a bright citrus aroma.
