Instructions

- Add Half of the Toppings: Sprinkle half of the shredded cheese evenly over the chips, then top with half of the black beans, corn, diced red bell pepper, red onion, and jalapeño slices.
- Layer the Second Half: Add the remaining tortilla chips on top, followed by the rest of the shredded cheese and the remaining beans and vegetables for a layered effect packed with flavor.
- Bake: Place the baking sheet in the oven and bake for 8–10 minutes, or until the cheese is fully melted, bubbly, and golden brown in spots.
- Add Fresh Toppings: Remove the nachos from the oven and immediately scatter the halved cherry tomatoes, diced avocado, sliced green onions, chopped cilantro, and optional black olives over the top while the nachos are hot.
- Serve: Serve the loaded veggie nachos hot with sides of sour cream or Greek yogurt, salsa, guacamole, and lime wedges for added zest and creaminess.
