Ingredients

Pasta

  • 350 g spaghetti or linguine

  • 2 tbsp extra virgin olive oil
  • 1/2 tsp dried oregano

  • 1/2 cup grated Parmesan
  • 1/4 cup fresh basil, chopped

  • 1/2 cup reserved pasta water


Instructions

  1. Cook the Pasta: Boil the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta thoroughly.
  2. Sauté the Zucchini: Heat the olive oil in a large skillet over medium heat. Add the thinly sliced zucchini and sauté for 4 to 5 minutes until the zucchini is tender and lightly golden.
  3. Add Aromatics: Stir in the minced garlic, dried oregano, and red pepper flakes (if using). Cook for 30 to 60 seconds until fragrant, being careful not to burn the garlic.
  4. Combine Pasta and Flavors: Add the drained pasta to the skillet with the zucchini. Then add the lemon zest, lemon juice, and a splash of the reserved pasta water. Toss everything well to coat the pasta evenly and create a glossy sauce, adding more pasta water as needed for desired consistency.
  5. Finish the Dish: Stir in the grated Parmesan cheese and chopped fresh basil. Season with salt and black pepper to taste. Toss again to combine all flavors thoroughly.
  6. Serve: Plate the pasta immediately, topping with extra Parmesan and lemon zest if desired for added flavor and presentation.
