Ingredients
Pasta
- 350 g spaghetti or linguine
Vegetables and Aromatics
- 2 medium zucchini, thinly sliced
- 3 garlic cloves, minced
- 1 lemon, zested and juiced

- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper, to taste

- 1/2 cup grated Parmesan
- 1/4 cup fresh basil, chopped

- 1/2 cup reserved pasta water
Instructions
- Cook the Pasta: Boil the pasta according to package instructions until al dente. Reserve 1/2 cup of the pasta cooking water, then drain the pasta thoroughly.
- Sauté the Zucchini: Heat the olive oil in a large skillet over medium heat. Add the thinly sliced zucchini and sauté for 4 to 5 minutes until the zucchini is tender and lightly golden.
- Add Aromatics: Stir in the minced garlic, dried oregano, and red pepper flakes (if using). Cook for 30 to 60 seconds until fragrant, being careful not to burn the garlic.
- Combine Pasta and Flavors: Add the drained pasta to the skillet with the zucchini. Then add the lemon zest, lemon juice, and a splash of the reserved pasta water. Toss everything well to coat the pasta evenly and create a glossy sauce, adding more pasta water as needed for desired consistency.
- Finish the Dish: Stir in the grated Parmesan cheese and chopped fresh basil. Season with salt and black pepper to taste. Toss again to combine all flavors thoroughly.
- Serve: Plate the pasta immediately, topping with extra Parmesan and lemon zest if desired for added flavor and presentation.
