- 1½ cups buttermilk
- 2 tablespoons fresh lemon juice
- 2 large eggs
- 3 tablespoons melted unsalted butter
- 1 teaspoon vanilla extract
For Serving
- Maple syrup

- Powdered sugar (optional)
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, poppy seeds, and lemon zest to combine all the dry ingredients evenly.
- Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, lemon juice, eggs, melted butter, and vanilla extract until smooth and well incorporated.

- Serve: Serve the pancakes warm with maple syrup, fresh berries, and a sprinkle of powdered sugar if desired.
