Potatoes

Sauce and Seasonings

- 1 lemon, juiced and zested
- 1 teaspoon Italian seasoning
- 1 teaspoon paprika
- 1 teaspoon salt

Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it’s hot enough for roasting the potatoes and chicken perfectly.
- Prepare Potatoes: In a large bowl, toss the halved baby potatoes with 2 tablespoons of olive oil, half of the minced garlic, Italian seasoning, paprika, salt, and black pepper until evenly coated.
- Roast Potatoes: Spread the potatoes out on a large sheet pan in a single layer and roast in the preheated oven for 15 minutes to start the cooking process and develop a crispy exterior.
- Make Sauce & Prep Chicken: While the potatoes roast, combine the remaining 1 tablespoon olive oil, the remaining garlic, lemon juice, lemon zest, and melted butter in a bowl. Brush this bright, flavorful mixture generously over the chicken breasts or thighs.
- Add Chicken to Potatoes: Remove the sheet pan from the oven carefully. Nestle the prepared chicken pieces among the partially roasted potatoes to allow flavors to meld while finishing cooking.
- Finish Baking: Return the sheet pan to the oven and bake for an additional 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender and golden brown.
