  • 1 tbsp coconut oil, melted
  • Pinch of salt

For Coating

  • 1/3 cup unsweetened shredded coconut
  • 1 tsp lemon zest


Instructions

  1. Chop Cashews: Add the cashews to a food processor and pulse until finely chopped to create a textured base for the bliss balls.
  2. Add Remaining Ingredients: Add the dates, shredded coconut, almond flour, fresh lemon juice, lemon zest, vanilla extract, melted coconut oil, and a pinch of salt to the food processor.
  3. Process Mixture: Process the ingredients together until the mixture becomes sticky and holds together when pressed, ensuring it has the right consistency to shape into balls.
  4. Form Balls: Scoop out about 1 tablespoon of the mixture and roll between your palms to form round bliss balls.
  5. Repeat Shaping: Repeat the rolling process with the remaining mixture until all the dough is shaped into balls.
  6. Prepare Coating: Combine the shredded coconut and lemon zest in a small bowl to create the coating mixture.
  7. Coat Bliss Balls: Roll each bliss ball in the coconut and lemon zest mixture until lightly and evenly coated.
