Instructions

  1. Cook the cauliflower: Bring a pot of salted water to a boil. Add the cauliflower florets and cook for 5–7 minutes, until just fork-tender but not mushy. Alternatively, steam them until tender.
  2. Drain and cool: Drain the cauliflower thoroughly and allow it to cool completely. Pat dry if needed to remove excess moisture.
  3. Cook the eggs: Place the eggs in a saucepan, cover with water, and bring to a boil. Cook for 9–11 minutes, then transfer to an ice bath. Peel and chop once cooled.
  4. Prepare the dressing: In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, salt, and black pepper.
  5. Add the vegetables: Fold in the cooled cauliflower, chopped eggs, celery, red onion, and fresh dill. Mix gently until everything is evenly coated.
  6. Chill the salad: Cover and refrigerate for at least 30 minutes to allow the flavors to blend.
  7. Garnish and serve: Sprinkle with paprika and fresh chives before serving.
