This keto chicken noodle soup delivers all the comforting flavors of classic chicken noodle soup without the noodles. Loaded with tender chicken, fresh vegetables, and a flavorful broth, it’s a satisfying low-carb meal perfect for chilly days and those following a ketogenic diet.
Ingredients
Soup Base
- 2 tbsp olive oil
- 1 small onion, diced
- 2 celery stalks, sliced
- 2 carrots, diced
- 3 cloves garlic, minced
- 8 cups (1.9L) chicken broth
Main Ingredients
- 3 cups cooked shredded chicken
- 2 cups zucchini noodles or sliced zucchini
Seasonings
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Heat oil: Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering to prepare the base for sautéing the vegetables.
- Sauté vegetables: Add diced onion, sliced celery, and diced carrots to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables soften and develop their flavors.
- Add garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, being careful not to burn the garlic.
- Add broth and seasonings: Pour in 8 cups of chicken broth, then add dried thyme, dried parsley, salt, and black pepper. Stir to combine all ingredients.
- Simmer soup: Bring the mixture to a boil, then reduce the heat to maintain a gentle simmer for 15 minutes to allow the flavors to meld.
- Add chicken and zucchini noodles: Stir in the cooked shredded chicken and the zucchini noodles or sliced zucchini. Mix well to combine.
- Final simmer: Continue simmering the soup for 3 to 5 minutes, until the zucchini is tender but not mushy, and the chicken is heated through.
- Serve: Ladle the hot soup into bowls and enjoy immediately for a comforting, low-carb meal.
Notes
- For stricter keto diets, reduce or omit the carrots as they contain higher carbs.
- Add fresh spinach to the soup during the last few minutes of cooking for extra nutrients and color.
