Description

This keto chicken noodle soup delivers all the comforting flavors of classic chicken noodle soup without the noodles. Loaded with tender chicken, fresh vegetables, and a flavorful broth, it’s a satisfying low-carb meal perfect for chilly days and those following a ketogenic diet.

Ingredients

Soup Base

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 celery stalks, sliced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 8 cups (1.9L) chicken broth

Main Ingredients

  • 3 cups cooked shredded chicken
  • 2 cups zucchini noodles or sliced zucchini

Seasonings

  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Heat oil: Heat 2 tablespoons of olive oil in a large pot over medium heat until shimmering to prepare the base for sautéing the vegetables.
  2. Sauté vegetables: Add diced onion, sliced celery, and diced carrots to the pot. Cook for 5 minutes, stirring occasionally, until the vegetables soften and develop their flavors.
  3. Add garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, being careful not to burn the garlic.
  4. Add broth and seasonings: Pour in 8 cups of chicken broth, then add dried thyme, dried parsley, salt, and black pepper. Stir to combine all ingredients.
  5. Simmer soup: Bring the mixture to a boil, then reduce the heat to maintain a gentle simmer for 15 minutes to allow the flavors to meld.
  6. Add chicken and zucchini noodles: Stir in the cooked shredded chicken and the zucchini noodles or sliced zucchini. Mix well to combine.
  7. Final simmer: Continue simmering the soup for 3 to 5 minutes, until the zucchini is tender but not mushy, and the chicken is heated through.
  8. Serve: Ladle the hot soup into bowls and enjoy immediately for a comforting, low-carb meal.

Notes

  • For stricter keto diets, reduce or omit the carrots as they contain higher carbs.
  • Add fresh spinach to the soup during the last few minutes of cooking for extra nutrients and color.
  • Store any leftovers in an airtight container in the refrigerator for up to 4 days.
