Description

Perfectly grilled chicken breasts marinated in olive oil, lemon juice, garlic, and Italian seasoning, grilled to juicy and flavorful perfection. This simple yet delicious recipe ensures tender chicken every time, ideal for a quick and healthy meal.

Ingredients

Chicken

  • 4 chicken breasts

Marinade

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste

Instructions

  1. Prepare the Marinade: In a small bowl, combine olive oil, lemon juice, minced garlic, Italian seasoning, salt, and pepper. Mix well to blend the flavors thoroughly.
  2. Marinate the Chicken: Place the chicken breasts in a shallow dish or resealable plastic bag and pour the marinade over them. Ensure each breast is coated evenly. Cover and refrigerate for 30 minutes to let the flavors infuse.
  3. Preheat the Grill: Heat the grill to medium-high temperature, around 400°F, to prepare for cooking the chicken breasts evenly and to achieve a nice char.
  4. Grill the Chicken: Remove the chicken from the marinade, letting excess drip off. Place the breasts on the grill and cook for 6 to 7 minutes on one side without moving them to develop grill marks. Flip and grill the other side for another 6 to 7 minutes, or until the internal temperature reaches 165°F, ensuring the chicken is cooked through but still juicy.
  5. Rest the Chicken: Transfer the grilled chicken breasts to a plate and let them rest for 5 minutes. This allows the juices to redistribute, making the chicken moist and tender when sliced.
  6. Serve: Slice against the grain and serve immediately with your favorite sides or salads for a complete meal.

Notes

  • For extra flavor, marinate the chicken for up to 2 hours but no longer to avoid the acid breaking down the meat too much.
  • Use a meat thermometer to ensure the chicken is perfectly cooked without drying out.
  • If grilling indoors, use a grill pan on the stovetop and follow the same cooking times.
  • Leftovers can be refrigerated for up to 3 days and reheated gently to preserve moisture.
