Ingredients
For the Dough
- 3 cups all-purpose flour
- 1 packet active dry yeast (about 2 1/4 teaspoons)
- 1 cup warm water (about 110°F)
- 2 tablespoons sugar
- 1/4 cup olive oil
- 1/2 teaspoon salt

- 1/2 cup jam (any flavor, preferably thick)
- Extra sugar for topping (about 2 tablespoons)
Instructions
- Activate the yeast: In a large bowl, dissolve the active dry yeast and sugar into the warm water. Allow it to sit for 5 minutes until the mixture becomes frothy, indicating the yeast is active.
- Make the dough: Add the all-purpose flour, olive oil, and salt to the yeast mixture. Stir together until a soft dough forms.
- Knead the dough: Transfer the dough onto a floured surface and knead it for about 8-10 minutes until smooth and elastic. Alternatively, use a stand mixer with dough hook attachment.
- First rise: Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
- Shape the dough: Gently punch down the risen dough and press it evenly into a greased baking pan, shaping it into a focaccia base about 1-inch thick.
- Add the jam filling: Spoon the jam evenly over the surface of the dough. Using your fingers, gently press the jam down slightly into the dough to embed the jam without mixing it in entirely.
- Second rise: Let the jam-covered dough rise again for 20 minutes to allow the dough to relax and puff up slightly.
- Bake the focaccia: Preheat your oven to 190°C (375°F). Bake the focaccia for 20–25 minutes or until the top is golden brown and the edges are crisp.
- Add sugar topping: Immediately after removing from the oven, sprinkle the focaccia generously with sugar while it is still warm, mimicking the sugar coating of donuts.
