Description
A creamy, cheesy chicken dish inspired by jalapeño poppers, featuring tender chicken breasts simmered in a spicy jalapeño and garlic cream sauce, topped with crispy bacon bits and fresh parsley for a flavorful, slightly spicy twist perfect for an easy weeknight dinner.
Ingredients
Chicken
- 2 chicken breasts
- 2 tbsp olive oil
- Salt and pepper to taste
Sauce
- 3 jalapeños, sliced
- 3 cloves garlic, minced
- 150 g cream cheese
- 1/2 cup shredded cheddar cheese
- 1/2 cup chicken broth
- 1/2 tsp paprika
Toppings & Garnish
- 1/4 cup cooked bacon bits
- Fresh parsley for garnish
Instructions
- Season the chicken: Pat the chicken breasts dry and season both sides generously with salt and pepper to enhance the flavor during cooking.
- Cook the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, until golden brown and cooked through. Remove from the pan and set aside on a plate.
- Sauté jalapeños and garlic: In the same skillet, add the sliced jalapeños and minced garlic. Sauté for 2-3 minutes until fragrant and the jalapeños start to soften.
- Make the sauce: Add the cream cheese, shredded cheddar cheese, chicken broth, and paprika to the skillet. Stir continuously until the cheeses melt completely and the sauce becomes smooth and creamy.
- Combine chicken and sauce: Return the cooked chicken breasts to the skillet, spooning the creamy jalapeño sauce over them to coat evenly. Let them simmer in the sauce for 2-3 minutes to absorb flavors.
- Add bacon and finish: Sprinkle the cooked bacon bits on top of the chicken and cook for another 2-3 minutes, allowing the bacon to warm through and slightly crisp up.
- Garnish and serve: Remove from heat, garnish with fresh parsley, and serve hot. This dish pairs wonderfully with rice, pasta, or roasted vegetables.
Notes
- Remove jalapeño seeds and membranes if you prefer a milder heat level.
- Serve with a side of rice, pasta, or roasted vegetables for a complete meal.
- You can substitute bacon bits with turkey bacon for a leaner option.
- Adjust the amount of jalapeños according to your tolerance for spiciness.
- For dairy-free options, try using dairy-free cream cheese and cheddar substitutes.
