Description

A creamy, cheesy chicken dish inspired by jalapeño poppers, featuring tender chicken breasts simmered in a spicy jalapeño and garlic cream sauce, topped with crispy bacon bits and fresh parsley for a flavorful, slightly spicy twist perfect for an easy weeknight dinner.

Ingredients

Chicken

  • 2 chicken breasts
  • 2 tbsp olive oil
  • Salt and pepper to taste

Sauce

  • 3 jalapeños, sliced
  • 3 cloves garlic, minced
  • 150 g cream cheese
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup chicken broth
  • 1/2 tsp paprika

Toppings & Garnish

  • 1/4 cup cooked bacon bits
  • Fresh parsley for garnish

Instructions

  1. Season the chicken: Pat the chicken breasts dry and season both sides generously with salt and pepper to enhance the flavor during cooking.
  2. Cook the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes per side, until golden brown and cooked through. Remove from the pan and set aside on a plate.
  3. Sauté jalapeños and garlic: In the same skillet, add the sliced jalapeños and minced garlic. Sauté for 2-3 minutes until fragrant and the jalapeños start to soften.
  4. Make the sauce: Add the cream cheese, shredded cheddar cheese, chicken broth, and paprika to the skillet. Stir continuously until the cheeses melt completely and the sauce becomes smooth and creamy.
  5. Combine chicken and sauce: Return the cooked chicken breasts to the skillet, spooning the creamy jalapeño sauce over them to coat evenly. Let them simmer in the sauce for 2-3 minutes to absorb flavors.
  6. Add bacon and finish: Sprinkle the cooked bacon bits on top of the chicken and cook for another 2-3 minutes, allowing the bacon to warm through and slightly crisp up.
  7. Garnish and serve: Remove from heat, garnish with fresh parsley, and serve hot. This dish pairs wonderfully with rice, pasta, or roasted vegetables.

Notes

  • Remove jalapeño seeds and membranes if you prefer a milder heat level.
  • Serve with a side of rice, pasta, or roasted vegetables for a complete meal.
  • You can substitute bacon bits with turkey bacon for a leaner option.
  • Adjust the amount of jalapeños according to your tolerance for spiciness.
  • For dairy-free options, try using dairy-free cream cheese and cheddar substitutes.
