Instructions
- Heat olive oil: Heat olive oil in a large skillet over medium-high heat to prepare for cooking the sausage.
- Cook Italian sausage: Add the Italian sausage, breaking it apart with a spoon, and cook for 5–7 minutes until browned and fully cooked through.
- Sauté onion: Add the diced onion and cook for 2–3 minutes until softened and translucent.
- Add garlic: Stir in the minced garlic and cook for 30 seconds to release its aroma.
- Add gnocchi and tomatoes: Incorporate the gnocchi, cherry tomatoes, chicken broth, Italian seasoning, and optional red pepper flakes into the skillet.
- Simmer: Cover the skillet and simmer for 5–7 minutes, stirring occasionally, until the gnocchi are tender and have absorbed some flavor.
- Add cream and spinach: Stir in the heavy cream and fresh spinach, cooking for 2–3 minutes until the spinach wilts and the sauce slightly thickens.
- Season: Season the dish with salt and black pepper according to taste.
- Add Parmesan: Stir in the grated Parmesan cheese and cook for another minute to melt it into the sauce.
