Ingredients
Sausage and Vegetables
- 1 lb Italian sausage, casings removed
- 1 tbsp olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 cloves garlic, minced
Soup Base
- 4 cups chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 tsp Italian seasoning
- ½ tsp black pepper
Finishing Touches
- 2 cups fresh spinach
- Grated Parmesan cheese, for serving
Instructions
- Heat olive oil: In a large pot, heat 1 tablespoon of olive oil over medium heat to prepare for sautéing the sausage and vegetables.
- Cook the sausage: Add 1 lb of Italian sausage (removed from casings) to the pot and cook until browned, breaking it into crumble-sized pieces for even cooking and flavor.
- Sauté vegetables: Add diced onion, sliced carrots, diced celery, and minced garlic to the pot. Cook for about 5 minutes until the vegetables are softened and aromatic.
- Add broth and beans: Stir in 4 cups of chicken broth, drained and rinsed white beans (two 15 oz cans), 1 teaspoon Italian seasoning, and ½ teaspoon black pepper to build the flavorful base of the soup.
- Simmer the soup: Bring the mixture to a boil, then reduce the heat and let it simmer gently for 20 minutes to meld flavors and soften ingredients.
- Add spinach: Stir in 2 cups of fresh spinach and cook until the spinach is wilted, which typically takes just a few minutes.
- Adjust seasoning and serve: Taste the soup and adjust seasoning as needed. Serve the soup hot with a sprinkle of grated Parmesan cheese on top for added richness.
Notes
- Cannellini beans are preferred for their creamy texture, but great northern beans work well as a substitute.
- For a thicker consistency, mash some of the beans before serving to naturally thicken the soup.
- Leftover soup can be stored in the refrigerator for up to 4 days, making it great for meal prep.
