Description

This comforting Italian Sausage and White Bean Soup combines savory Italian sausage, creamy white beans, and aromatic vegetables simmered in a rich, flavorful broth. Ideal for cozy dinners and meal prep, this hearty soup features fresh spinach and a sprinkle of grated Parmesan cheese to enhance the taste.

Ingredients

Sausage and Vegetables

  • 1 lb Italian sausage, casings removed
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced

Soup Base

  • 4 cups chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 tsp Italian seasoning
  • ½ tsp black pepper

Finishing Touches

  • 2 cups fresh spinach
  • Grated Parmesan cheese, for serving

Instructions

  1. Heat olive oil: In a large pot, heat 1 tablespoon of olive oil over medium heat to prepare for sautéing the sausage and vegetables.
  2. Cook the sausage: Add 1 lb of Italian sausage (removed from casings) to the pot and cook until browned, breaking it into crumble-sized pieces for even cooking and flavor.
  3. Sauté vegetables: Add diced onion, sliced carrots, diced celery, and minced garlic to the pot. Cook for about 5 minutes until the vegetables are softened and aromatic.
  4. Add broth and beans: Stir in 4 cups of chicken broth, drained and rinsed white beans (two 15 oz cans), 1 teaspoon Italian seasoning, and ½ teaspoon black pepper to build the flavorful base of the soup.
  5. Simmer the soup: Bring the mixture to a boil, then reduce the heat and let it simmer gently for 20 minutes to meld flavors and soften ingredients.
  6. Add spinach: Stir in 2 cups of fresh spinach and cook until the spinach is wilted, which typically takes just a few minutes.
  7. Adjust seasoning and serve: Taste the soup and adjust seasoning as needed. Serve the soup hot with a sprinkle of grated Parmesan cheese on top for added richness.

Notes

  • Cannellini beans are preferred for their creamy texture, but great northern beans work well as a substitute.
  • For a thicker consistency, mash some of the beans before serving to naturally thicken the soup.
  • Leftover soup can be stored in the refrigerator for up to 4 days, making it great for meal prep.
