Description

These Huevos Rancheros Mini Savoury Bites transform the classic Mexican breakfast into fun, bite-sized appetizers featuring crispy tortilla cups filled with eggs, salsa, cheese, and fresh toppings for a flavorful and crowd-pleasing dish.

Ingredients

Main Ingredients

  • 6 small flour tortillas
  • 4 large eggs
  • ½ cup salsa
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp chopped cilantro
  • 1 small avocado, diced
  • Sour cream, for serving (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the tortilla cups.
  2. Prepare Tortilla Cups: Cut the small flour tortillas into rounds and press them gently into a greased mini muffin tin to form small cups.
  3. Bake Tortilla Cups: Bake the pressed tortilla rounds for 8–10 minutes until they become lightly crisp and hold their shape.
  4. Whisk Eggs: While the cups bake, whisk together the 4 large eggs with salt and black pepper until combined.
  5. Assemble Cups: Evenly distribute the salsa among the baked tortilla cups. Then pour the egg mixture into each cup, filling them up.
  6. Add Cheese Topping: Sprinkle shredded cheddar or Monterey Jack cheese on top of each cup, covering the egg mixture.
  7. Bake Filled Cups: Return the filled tortilla cups to the oven and bake for 12–15 minutes, or until the eggs are fully set and cooked through.
  8. Garnish and Serve: Once baked, garnish each mini bite with fresh chopped cilantro and diced avocado. Serve warm with sour cream if desired for added creaminess.

Notes

  • For extra protein, add cooked chorizo or black beans to the filling.
  • Using a mini muffin tin helps create perfectly sized bite-sized appetizers.
  • These bites are best served fresh from the oven to enjoy their crispy texture and warm filling.
