Ingredients
Main Ingredients
- 6 small flour tortillas
- 4 large eggs
- ½ cup salsa
- ½ cup shredded cheddar or Monterey Jack cheese
- ¼ tsp salt
- ¼ tsp black pepper
- 2 tbsp chopped cilantro
- 1 small avocado, diced
- Sour cream, for serving (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the tortilla cups.
- Prepare Tortilla Cups: Cut the small flour tortillas into rounds and press them gently into a greased mini muffin tin to form small cups.
- Bake Tortilla Cups: Bake the pressed tortilla rounds for 8–10 minutes until they become lightly crisp and hold their shape.
- Whisk Eggs: While the cups bake, whisk together the 4 large eggs with salt and black pepper until combined.
- Assemble Cups: Evenly distribute the salsa among the baked tortilla cups. Then pour the egg mixture into each cup, filling them up.
- Add Cheese Topping: Sprinkle shredded cheddar or Monterey Jack cheese on top of each cup, covering the egg mixture.
- Bake Filled Cups: Return the filled tortilla cups to the oven and bake for 12–15 minutes, or until the eggs are fully set and cooked through.
- Garnish and Serve: Once baked, garnish each mini bite with fresh chopped cilantro and diced avocado. Serve warm with sour cream if desired for added creaminess.
Notes
- For extra protein, add cooked chorizo or black beans to the filling.
