A unique and indulgent twist on classic focaccia, combining soft, airy bread with a sweet jam filling and a sugar-dusted finish reminiscent of donuts. This homemade jam donut focaccia offers a delightful blend of textures and flavors, perfect for a special breakfast or dessert treat.
Ingredients
Dough
- 3 cups all-purpose flour
- 1 packet active dry yeast (about 2 1/4 tsp)
- 1 cup warm water (about 110°F/43°C)
- 2 tablespoons sugar
- 1/4 cup olive oil
- 1/2 teaspoon salt
Filling & Topping
- 1/2 cup jam (any flavor, preferably thick)
- Extra granulated sugar for dusting
Instructions
- Activate Yeast: In a medium bowl, dissolve the active dry yeast and 2 tablespoons of sugar in 1 cup of warm water. Let it sit undisturbed for about 5 minutes, until it becomes frothy, indicating the yeast is active.
- Make Dough: To the yeast mixture, add 3 cups of all-purpose flour, 1/4 cup olive oil, and 1/2 teaspoon salt. Mix thoroughly until a soft dough forms that is slightly sticky but manageable.
- Knead Dough: Turn the dough out onto a floured surface and knead for about 8 to 10 minutes until it becomes smooth, elastic, and no longer sticky. This kneading develops gluten, which gives the focaccia its airy texture.
- First Rise: Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour or until doubled in size.
- Shape Dough: After the first rise, punch down the dough to release air. Transfer it into a greased baking pan (approximately 9×13 inches) and press it out evenly to cover the bottom of the pan.
- Add Jam Filling: Spoon 1/2 cup of your chosen jam evenly over the surface of the dough. Gently press the jam into the dough surface slightly, being careful not to tear the dough.
- Second Rise: Cover the dough again and let it rise for an additional 20 minutes to allow the jam to meld with the bread and for the dough to puff slightly.
- Bake: Preheat your oven to 190°C (375°F). Bake the focaccia for 20 to 25 minutes or until the surface is golden brown and cooked through.
- Finish & Serve: Remove the focaccia from the oven and while still warm, sprinkle generously with granulated sugar to mimic the sugar dusting on traditional jam donuts. Slice and serve fresh for the best flavor and texture.

- Use thick jam to prevent the dough from becoming too moist or soggy during baking.
- For extra sweetness, sprinkle with powdered sugar instead of granulated sugar after baking.
