Description

A comforting and hearty hobo casserole featuring layers of savory browned ground beef, thinly sliced potatoes, and onions, all smothered in a creamy mushroom sauce and topped with melted cheddar cheese. Baked to golden perfection, this easy one-dish meal is perfect for family dinners.

Ingredients

Meats

  • 1 lb ground beef

Vegetables

  • 4 medium potatoes, thinly sliced
  • 1 onion, sliced

Dairy & Sauces

  • 1 can cream of mushroom soup (approx. 10.5 oz)
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese

Seasonings

  • Salt & pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it reaches the right temperature for baking the casserole evenly.
  2. Brown Ground Beef: In a skillet over medium heat, cook the ground beef until it is fully browned. Drain any excess fat to keep the casserole from becoming greasy.
  3. Layer Ingredients: In a casserole dish, create a base layer with thinly sliced potatoes, then add the cooked ground beef, followed by a layer of sliced onions.
  4. Mix Sauce: In a bowl, combine the can of cream of mushroom soup with 1/2 cup milk, stirring until smooth. Pour this mixture evenly over the layered ingredients in the casserole dish.
  5. Bake Covered: Cover the casserole with foil or a lid and bake in the preheated oven for 45 minutes, allowing the potatoes to cook through and flavors to meld.
  6. Add Cheese & Bake More: Remove the cover, sprinkle the shredded cheddar cheese on top, and return the casserole to the oven for an additional 10 minutes. Bake uncovered until the cheese is melted and golden brown.

Notes

  • Ensure to slice the potatoes thinly for even cooking.
  • Drain the cooked ground beef well to prevent excess grease in the casserole.
  • You can substitute cream of mushroom soup with cream of celery or chicken soup if preferred.
  • For a richer casserole, use whole milk or add a little sour cream to the soup mixture.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best results.
