Description

Herbed Butter Steak is a juicy, perfectly seared steak topped with a rich garlic herb butter that melts enticingly over the meat. This simple yet elegant recipe delivers restaurant-quality flavor using everyday ingredients, making it perfect for special occasions or satisfying weeknight dinners.

Ingredients

Steak

  • 2 ribeye, New York strip, or sirloin steaks (1012 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder

Garlic Herb Butter

  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • ½ teaspoon lemon zest (optional)

Instructions

  1. Prepare the Steaks: Remove the steaks from the refrigerator about 30 minutes before cooking to allow them to reach room temperature, ensuring even cooking.
  2. Make the Garlic Herb Butter: In a small bowl, combine the softened butter, minced garlic, chopped parsley, thyme, rosemary, and optional lemon zest. Mix thoroughly and refrigerate until ready to use, allowing the flavors to meld.
  3. Season the Steaks: Pat the steaks dry with paper towels. Brush both sides evenly with olive oil. Then season each side generously with kosher salt, freshly ground black pepper, and garlic powder for enhanced flavor.
  4. Preheat Cooking Surface: Heat a grill or cast-iron skillet over high heat until very hot, which helps achieve a nice sear and crust on the steaks.
  5. Cook the Steaks: Place the steaks on the hot grill or skillet and cook for 4 to 5 minutes per side for a medium-rare doneness. Adjust time slightly to your preferred doneness level. Avoid moving the steaks during cooking to let a crust form.
  6. Rest and Finish: Transfer the cooked steaks to a plate. Spoon generous portions of the garlic herb butter on top of each steak. Let them rest for 5 to 10 minutes to allow juices to redistribute and the butter to melt beautifully over the meat.

Notes

  • Use a meat thermometer to check doneness precisely (130°F for medium-rare).
  • The herb butter can be made up to 3 days ahead and stored in the refrigerator.
  • Serve alongside roasted potatoes, grilled asparagus, or a fresh salad for a complete meal.
