Description

Herb-Marinated Mozzarella Balls are a simple yet elegant no-cook appetizer featuring tender mozzarella pearls infused with extra-virgin olive oil, fresh garlic, aromatic herbs, and a hint of red pepper flakes. This easy recipe combines creamy cheese with vibrant Mediterranean flavors, perfect for charcuterie boards, parties, picnics, and casual entertaining. Serve alongside crusty bread, crackers, cherry tomatoes, or fresh basil for a crowd-pleasing starter.

Ingredients

Mozzarella

  • 16 ounces fresh mozzarella balls or mozzarella pearls, drained

Marinade

  • 1/2 cup extra-virgin olive oil
  • 3 cloves garlic, thinly sliced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh basil, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes, optional
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt, or to taste
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice, optional

Instructions

  1. Drain the mozzarella: Drain the mozzarella balls thoroughly and gently pat them dry with paper towels. Removing excess moisture helps the marinade cling to the cheese effectively.
  2. Prepare the marinade: In a medium bowl, combine the olive oil, sliced garlic, parsley, basil, oregano, Italian seasoning, red pepper flakes, black pepper, salt, and lemon zest. Add the lemon juice if using and mix well to combine all flavors.
  3. Add the mozzarella: Place the drained mozzarella balls in a clean container or bowl. Pour the prepared herb and olive oil marinade over them, gently stirring to coat each piece evenly.
  4. Marinate: Cover the container and refrigerate for at least 1 hour to let the flavors meld. For a more intense herb infusion, marinate for up to 4 hours.
  5. Bring out the flavor: Remove the mozzarella from the refrigerator about 10 minutes before serving to allow the flavors to come through. Keep refrigerated during storage and avoid leaving at room temperature for long periods.
  6. Serve: Transfer the mozzarella balls to a serving dish, spoon some of the herb-infused oil on top, and garnish with extra fresh basil or parsley. Serve with crusty bread, crackers, cherry tomatoes, or olives for a delightful appetizer.

Notes

  • Use fresh mozzarella pearls or bocconcini as they absorb the herb flavors best.
  • Dry the cheese well to prevent the marinade from becoming diluted and watery.
  • Customize the herbs by adding fresh thyme, rosemary, or extra basil according to your taste preferences.
  • Adjust the spiciness by omitting or increasing the red pepper flakes.
  • For a fun serving idea, skewer mozzarella balls with cherry tomatoes and basil for a simple Caprese-inspired appetizer.
  • Keep the marinated cheese refrigerated at 40°F (4°C) or below to ensure food safety and use within 3–4 days.
  • Do not store the garlic and oil mixture at room temperature and discard any leftovers left out for more than 2 hours.
  • Prepare the mozzarella a few hours ahead of serving for the best flavor and convenience.
