Ingredients
Chicken and Broth
- 2 chicken breasts
- 6 cups chicken broth
Vegetables and Aromatics

- 1 tablespoon olive oil

- 1 can chickpeas, drained and rinsed

Instructions
- Sauté Vegetables: Heat the olive oil in a large pot over medium heat. Add the chopped onion, minced garlic, and diced carrot. Cook and stir until the vegetables soften and become fragrant, about 5 to 7 minutes.
- Add Chicken and Broth: Place the chicken breasts into the pot with the vegetables. Pour in the chicken broth and bring the mixture to a boil over high heat.
- Simmer Chicken: Reduce heat to low and let the soup simmer gently until the chicken is fully cooked through, about 20 minutes. This allows the flavors to meld and the chicken to tenderize.
- Shred Chicken: Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken back into the soup pot.
- Add Chickpeas and Spices: Stir in the rinsed chickpeas, cumin, and paprika. Continue to simmer the soup for another 10 to 15 minutes, allowing the chickpeas to heat through and spices to enhance the broth.
- Season and Garnish: Taste the soup and season with salt and freshly ground black pepper as needed. Serve the soup hot, garnished with fresh cilantro or parsley for a burst of freshness.
