Description

This comforting Beef Casserole combines seasoned ground beef, tender mixed vegetables, creamy mushroom soup, and melted cheddar cheese baked with egg noodles to create a hearty and satisfying family-friendly main dish.

Ingredients

Meat and Vegetables

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cups frozen mixed vegetables

Dairy and Sauce

  • 1 (10.5 oz) can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • ½ cup milk

Other

  • 2 cups cooked egg noodles
  • 1 tsp garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to get it ready for baking the casserole.
  2. Brown Beef and Onion: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and fully cooked, breaking up the meat as it cooks.
  3. Drain Fat: Carefully drain any excess fat from the skillet to avoid greasiness in the casserole.
  4. Mix Ingredients: Stir in the frozen mixed vegetables, cream of mushroom soup, milk, garlic powder, salt, and black pepper into the cooked beef mixture ensuring everything is evenly combined.
  5. Add Noodles: Fold in the cooked egg noodles gently to incorporate them without breaking.
  6. Prepare Baking Dish: Transfer the mixture into a greased 9×13-inch baking dish, spreading it out evenly.
  7. Add Cheese: Sprinkle the shredded cheddar cheese evenly over the top of the casserole to create a melty, golden crust.
  8. Bake: Place the dish in the oven and bake for 25–30 minutes until the casserole is hot, bubbly, and the cheese is melted and slightly browned.
  9. Rest and Serve: Remove from oven and let the casserole rest for 5 minutes before serving to allow it to set and cool slightly.
