Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Mix Wet Ingredients: In a large bowl, mash the ripe banana thoroughly. Add grated zucchini that has been squeezed to remove excess moisture, then stir in the almond or peanut butter, honey or maple syrup, egg, and vanilla extract until the mixture is smooth and well combined.
  3. Combine Dry Ingredients: In a separate bowl, mix together the rolled oats, whole wheat flour, ground cinnamon, baking powder, and salt to evenly distribute the leavening agent and spices.
  4. Form Dough: Add the dry mixture to the wet ingredients and stir gently until just combined; avoid overmixing to maintain a tender cookie texture.
  5. Add Optional Ingredients: Fold in chopped walnuts and dark chocolate chips if desired, making sure they are evenly incorporated into the dough.
