Description

Liquids

Finishing Ingredients

  • ½ cup plain Greek yogurt
  • 1 tbsp fresh lime juice

Instructions

  1. Combine Ingredients: Place the chicken breasts, white beans, corn, diced onion, minced garlic, diced green chilies, and low-sodium chicken broth into the slow cooker.
  2. Add Spices: Sprinkle cumin, dried oregano, chili powder, paprika, salt, and black pepper over the mixture. Stir everything together to evenly distribute the spices.
  3. Cook in Slow Cooker: Cover the slow cooker and cook the chili on LOW heat for 6 to 7 hours or on HIGH heat for 3 to 4 hours, allowing the flavors to meld and the chicken to become tender.
  4. Shred Chicken: Remove the cooked chicken breasts from the slow cooker and shred them thoroughly using two forks.
  5. Return Chicken to Chili: Place the shredded chicken back into the slow cooker and stir well to combine with the other ingredients.
  6. Add Creaminess and Lime: Stir in the plain Greek yogurt and fresh lime juice to add creaminess and a hint of tang to the chili.
