Ingredients
Protein
- 700 g boneless, skinless chicken breasts
Vegetables & Beans
- 2 cans white beans, drained and rinsed
- 1 cup corn
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can diced green chilies
Liquids
- 4 cups low-sodium chicken broth
Spices & Seasonings
- 1 tsp cumin
- 1 tsp dried oregano
- ½ tsp chili powder
- ½ tsp paprika
- ½ tsp salt
- ¼ tsp black pepper
Finishing Ingredients
- ½ cup plain Greek yogurt
- 1 tbsp fresh lime juice
- ¼ cup fresh cilantro, chopped
Instructions
- Combine Ingredients: Place the chicken breasts, white beans, corn, diced onion, minced garlic, diced green chilies, and low-sodium chicken broth into the slow cooker.
- Add Spices: Sprinkle cumin, dried oregano, chili powder, paprika, salt, and black pepper over the mixture. Stir everything together to evenly distribute the spices.
- Cook in Slow Cooker: Cover the slow cooker and cook the chili on LOW heat for 6 to 7 hours or on HIGH heat for 3 to 4 hours, allowing the flavors to meld and the chicken to become tender.
- Shred Chicken: Remove the cooked chicken breasts from the slow cooker and shred them thoroughly using two forks.
- Return Chicken to Chili: Place the shredded chicken back into the slow cooker and stir well to combine with the other ingredients.
- Add Creaminess and Lime: Stir in the plain Greek yogurt and fresh lime juice to add creaminess and a hint of tang to the chili.
- Final Warm Through: Cook the chili for an additional 5 to 10 minutes until everything is warmed through and the yogurt is fully incorporated.
- Garnish and Serve: Garnish the chili with freshly chopped cilantro before serving. Optional toppings include avocado slices, extra cilantro, lime wedges, or a small sprinkle of shredded cheese.
Notes
- For a thicker chili texture, mash some of the white beans before adding them to the slow cooker.
- Using Greek yogurt adds a creamy texture without making the chili too heavy or rich.
- Customize toppings with avocado, lime wedges, shredded cheese, or extra cilantro as desired for extra flavor and texture.
