Description

Healthy dill pickle chicken salad is a creamy, crunchy, and tangy dish packed with tender chicken and the refreshing flavor of dill pickles. Made with a lighter Greek yogurt-based dressing and fresh vegetables, it’s perfect for sandwiches, wraps, lettuce cups, or meal prep for a nutritious and satisfying lunch.

Ingredients

Chicken Salad Ingredients

  • 3 cups cooked shredded or diced chicken
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1/3 cup dill pickles, finely chopped
  • 2 tablespoons dill pickle juice
  • 1/4 cup celery, finely diced
  • 2 tablespoons red onion, finely diced
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt, to taste

Instructions

  1. Prepare the dressing: In a large bowl, combine Greek yogurt, mayonnaise, dill pickle juice, Dijon mustard, garlic powder, black pepper, and a pinch of salt. Stir until the mixture is smooth and well blended.
  2. Add the main ingredients: Add the cooked chicken, finely chopped dill pickles, celery, red onion, and fresh dill to the bowl with the dressing.
  3. Mix thoroughly: Gently stir all the ingredients together until everything is evenly coated with the dressing.
  4. Adjust seasoning: Taste the salad and adjust the seasoning as needed. Add extra salt or dill pickle juice if you desire a tangier flavor.
  5. Chill before serving: Cover the bowl with plastic wrap or transfer to an airtight container and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve and enjoy: Serve the chicken salad on whole-grain bread, inside a wrap, over fresh greens, or in lettuce cups for a light and flavorful meal.

  • Add chopped cucumber or green onions for extra crunch and freshness.
  • For increased protein and lower fat, replace some or all of the mayonnaise with additional Greek yogurt.
