Ingredients
For the Burger Meat
- 1 ½ lb lean ground beef
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
For the Bowls
- 6 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- ½ cup dill pickles, chopped
- ½ small red onion, thinly sliced
- 1 avocado, diced
- ½ cup shredded cheddar cheese
- ¼ cup sliced green onions (optional)
For the Special Sauce
- ½ cup plain Greek yogurt
- 2 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp finely chopped dill pickles
- 1 tsp pickle juice
- ½ tsp garlic powder
- ½ tsp smoked paprika
- Pinch of salt and black pepper
Instructions
- Prepare the Special Sauce: In a small bowl, whisk together Greek yogurt, mayonnaise, ketchup, yellow mustard, finely chopped dill pickles, pickle juice, garlic powder, smoked paprika, salt, and black pepper until smooth. Refrigerate until ready to use to allow flavors to meld.
- Cook the Beef: Heat olive oil in a large skillet over medium-high heat. Add the ground beef along with garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 7–9 minutes, breaking the beef apart with a spatula, until browned and cooked through.
- Drain Excess Grease: Remove any excess grease from the skillet to keep the dish lighter and prevent sogginess in the bowls.
- Assemble the Bowls: Evenly divide the chopped romaine lettuce into four bowls. Top each with the cooked seasoned ground beef, halved cherry tomatoes, chopped dill pickles, thinly sliced red onions, diced avocado, and shredded cheddar cheese.
- Add Special Sauce and Garnish: Drizzle each bowl generously with the prepared special sauce. Optionally, garnish with sliced green onions for an added fresh bite.
- Serve: Serve the burger bowls immediately for best taste and texture, or pack components separately for meal prep and combine before eating.
Notes
- Ground turkey or chicken can be substituted for the beef for a leaner protein option.
- Add roasted potatoes or sweet potato cubes to the bowl for a heartier meal.
- For a lower-carb meal, omit starchy sides and increase vegetable portions.
- The special sauce can be prepared up to 3 days ahead and stored refrigerated.
- For meal prep, store cooked beef, vegetables, and sauce separately and assemble when ready to eat to maintain freshness.
