Ingredients
Steak and Salad
- 450 g sirloin steak
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
- 5 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup black beans, drained
- 1/2 cup sweet corn
- 1/4 red onion, diced
- 1/4 cup fresh cilantro
Guacamole
- 2 ripe avocados
- 2 tbsp fresh lime juice
- 1/4 cup red onion, finely diced
- 2 tbsp fresh cilantro, chopped
- 1 small tomato, diced
- 1/2 jalapeño, finely chopped (optional)
- Salt, to taste
Dressing
- 2 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 tsp honey
- 1/2 tsp cumin
- Salt and black pepper, to taste
Instructions
- Season the steak: In a small bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper. Rub the mixture evenly onto both sides of the sirloin steak to coat thoroughly.
- Preheat grill or skillet: Heat a grill or skillet over medium-high heat until hot, ensuring it is ready to cook the steak to sear it properly.
- Cook the steak: Place the steak onto the grill or skillet and cook for 3 to 5 minutes per side depending on the thickness and your desired level of doneness (medium-rare to medium recommended for best flavor).
- Rest and slice the steak: Remove the steak from heat and allow it to rest for 5 to 10 minutes to let the juices redistribute. After resting, slice the steak thinly against the grain for tenderness.
- Prepare the guacamole: In a bowl, mash the ripe avocados until smooth but still slightly chunky. Stir in fresh lime juice, finely diced red onion, chopped cilantro, diced tomato, jalapeño if using, and salt to taste. Mix well to combine.
- Assemble the salad base: Arrange chopped romaine lettuce, halved cherry tomatoes, drained black beans, sweet corn, diced red onion, and fresh cilantro evenly in serving bowls or a large salad platter.
- Add steak and guacamole: Top the salad base with the thinly sliced steak and spoon generous portions of the prepared guacamole over the top for creamy richness.
- Make the dressing: In a small bowl, whisk together olive oil, fresh lime juice, honey, cumin, salt, and black pepper until emulsified and smooth.
- Dress and serve: Drizzle the lime dressing over the assembled salad and serve immediately to enjoy the fresh flavors at their best.
Notes
- Prepare the guacamole shortly before serving to minimize browning and maintain vibrant color.
- Add crunchy tortilla strips on top for extra texture and flavor contrast.
- Substitute grilled chicken for steak if preferred for a lighter protein option.
- For meal prepping, store guacamole and dressing separately and assemble just before eating to keep ingredients fresh.
