Description

Ground Chicken Lettuce Wraps are a fresh and healthy meal featuring savory ground chicken cooked with garlic, ginger, and a flavorful Asian-inspired sauce, served in crisp lettuce leaves. This quick and easy recipe is low in carbs and perfect for a light lunch or dinner.

Ingredients

Protein

  • 1 pound ground chicken

Vegetables & Aromatics

  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 cup diced mushrooms
  • 1 (8-ounce) can water chestnuts, drained and chopped
  • 2 green onions, sliced
  • 1 head butter lettuce or iceberg lettuce, leaves separated

Sauce & Seasonings

  • 1 tablespoon sesame oil
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha (optional)
  • 1 teaspoon honey
  • Sesame seeds, for garnish

Instructions

  1. Heat the oil: Heat sesame oil in a large skillet over medium-high heat to prepare for sautéing.
  2. Sauté aromatics: Add the finely diced onion, minced garlic, and grated ginger to the skillet and sauté for 2–3 minutes until fragrant and slightly softened.
  3. Cook ground chicken: Add the ground chicken to the skillet. Break it apart with a spatula and cook until browned and fully cooked through, about 5–7 minutes.
  4. Add vegetables: Stir in the diced mushrooms and chopped water chestnuts and cook for another 3–4 minutes until the mushrooms have softened.
  5. Prepare sauce: In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, Sriracha (if using), and honey until well combined.
  6. Combine sauce and filling: Pour the sauce into the skillet, stirring well to coat all the ingredients evenly. Cook for an additional 2 minutes until heated through.
  7. Finish with green onions: Remove the skillet from heat and stir in the sliced green onions for a fresh, bright flavor.
  8. Assemble wraps: Spoon the savory chicken mixture into the separated lettuce leaves and garnish with sesame seeds before serving.

Notes

  • Butter lettuce makes the best wraps due to its soft texture, but iceberg lettuce can be a crunchy alternative.
  • For extra texture and color, add shredded carrots or diced bell peppers to the filling.
  • Leftover filling can be stored in an airtight container in the refrigerator for up to 4 days.
  • To make this recipe gluten-free, use gluten-free soy sauce and hoisin sauce.
