Ingredients
Protein and Oils
- 1 lb (450 g) ground chicken
- 1 tbsp sesame oil
- 1 tbsp olive oil
Vegetables
- 1 small bell pepper, diced
- 1 small carrot, thinly sliced
- 1 cup broccoli florets
- ½ cup snap peas
- ½ small onion, sliced
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
Sauce
- ¼ cup low-sodium soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- ½ tsp red pepper flakes (optional)
Garnish
- 2 green onions, sliced
- 1 tbsp sesame seeds
Instructions
- Heat the oils: In a large skillet or wok, heat the sesame oil and olive oil over medium-high heat until hot but not smoking, preparing the pan for cooking chicken and vegetables.
- Cook the ground chicken: Add the ground chicken to the skillet and cook for 5–7 minutes, breaking it apart with a spatula, until it’s browned and cooked through.
- Stir-fry the vegetables: Add the sliced onion, diced bell pepper, carrot, broccoli florets, and snap peas to the skillet. Stir-fry for 5–6 minutes until the vegetables are crisp-tender but still vibrant and slightly crunchy.
- Add aromatics: Stir in the minced garlic and grated ginger and cook for about 30 seconds to release their fragrant flavors without burning.
- Prepare the sauce: In a small bowl, whisk together the low-sodium soy sauce, hoisin sauce, honey, rice vinegar, and red pepper flakes if using, to create a balanced savory and slightly sweet sauce.
- Combine sauce and stir-fry: Pour the sauce evenly over the chicken and vegetables in the skillet. Toss everything well to coat the ingredients with the sauce.
- Finish cooking: Cook for an additional 2–3 minutes, stirring frequently, until the sauce thickens slightly and everything is heated through.
- Garnish and serve: Remove from heat, garnish with sliced green onions and sesame seeds. Serve immediately over steamed rice or noodles for a complete meal.
Notes
- Use any combination of your favorite stir-fry vegetables such as zucchini, mushrooms, or bok choy.
- Ground turkey can be substituted for ground chicken to vary flavor or preference.
- Add sriracha or chili garlic sauce if you like more heat in the dish.
- For a lower-carb option, serve this stir fry over steamed cauliflower rice instead of traditional rice or noodles.
