Description

Flavorful seasoned ground beef served over rice with black beans, corn, avocado, tomatoes, and cheese. A quick and customizable taco bowl perfect for busy weeknights, combining hearty protein with fresh, vibrant toppings for a satisfying Mexican-inspired meal.

Ingredients

Beef and Seasoning

  • 500 g lean ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper, to taste

Base and Toppings

  • 2 cups cooked rice
  • 1 cup black beans, drained
  • 1 cup sweet corn
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup shredded cheddar cheese
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat the olive oil: Warm the olive oil in a large skillet over medium-high heat to prepare for cooking the aromatics and beef.
  2. Sauté onions: Add the diced onion to the skillet and cook for 3 to 4 minutes until softened and translucent, building the flavor base.
  3. Add garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, taking care not to burn it.
  4. Cook ground beef: Add the lean ground beef to the skillet. Break it apart with a spoon and cook until fully browned and no pink remains.
  5. Season the beef: Sprinkle chili powder, cumin, smoked paprika, oregano, garlic powder, salt, and black pepper over the beef. Stir well to coat all meat evenly with the spices.
  6. Simmer the seasoning: Continue cooking for another 2 to 3 minutes, allowing the flavors to meld and the beef to become richly seasoned.
  7. Assemble bowls: Divide the cooked rice evenly into four bowls as the base layer.
  8. Add toppings: Top the rice with the seasoned beef, black beans, sweet corn, cherry tomatoes, and diced avocado to create a balanced, colorful bowl.
  9. Finish and garnish: Sprinkle shredded cheddar cheese and fresh cilantro over the top of each bowl for extra flavor and freshness.
  10. Serve: Offer lime wedges on the side so that diners can squeeze fresh lime juice over their bowls for a bright, tangy finish.

Notes

  • Substitute brown rice or quinoa for added fiber and nutrition.
  • Add salsa, Greek yogurt, or guacamole as additional flavorful toppings.
  • Ground turkey or chicken are great lean protein alternatives to beef.
  • For a lower-carb option, replace rice with cauliflower rice or extra leafy greens.
