Ingredients
Beef and Seasoning
- 500 g lean ground beef
- 1 tbsp olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp oregano
- 1/2 tsp garlic powder
- Salt and black pepper, to taste
Base and Toppings
- 2 cups cooked rice
- 1 cup black beans, drained
- 1 cup sweet corn
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup shredded cheddar cheese
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Heat the olive oil: Warm the olive oil in a large skillet over medium-high heat to prepare for cooking the aromatics and beef.
- Sauté onions: Add the diced onion to the skillet and cook for 3 to 4 minutes until softened and translucent, building the flavor base.
- Add garlic: Stir in the minced garlic and cook for 30 seconds until fragrant, taking care not to burn it.
- Cook ground beef: Add the lean ground beef to the skillet. Break it apart with a spoon and cook until fully browned and no pink remains.
- Season the beef: Sprinkle chili powder, cumin, smoked paprika, oregano, garlic powder, salt, and black pepper over the beef. Stir well to coat all meat evenly with the spices.
- Simmer the seasoning: Continue cooking for another 2 to 3 minutes, allowing the flavors to meld and the beef to become richly seasoned.
- Assemble bowls: Divide the cooked rice evenly into four bowls as the base layer.
- Add toppings: Top the rice with the seasoned beef, black beans, sweet corn, cherry tomatoes, and diced avocado to create a balanced, colorful bowl.
- Finish and garnish: Sprinkle shredded cheddar cheese and fresh cilantro over the top of each bowl for extra flavor and freshness.
- Serve: Offer lime wedges on the side so that diners can squeeze fresh lime juice over their bowls for a bright, tangy finish.
Notes
- Substitute brown rice or quinoa for added fiber and nutrition.
- Add salsa, Greek yogurt, or guacamole as additional flavorful toppings.
- Ground turkey or chicken are great lean protein alternatives to beef.
- For a lower-carb option, replace rice with cauliflower rice or extra leafy greens.
