Description
A creamy and cheesy ground beef and broccoli casserole that’s hearty, nutritious, and perfect for a comforting weeknight dinner. This dish features seasoned ground beef combined with tender broccoli and melted cheddar cheese, all baked to golden bubbly perfection.
Ingredients
Meat
- 1 lb ground beef
Vegetables
- 3 cups chopped broccoli (fresh or frozen)
Dairy
- ½ cup sour cream
- 1 cup shredded cheddar cheese
Canned Goods
- 1 can cream of mushroom or cream of chicken soup
Seasonings
- 1 tsp garlic powder
- Salt and pepper, to taste
Instructions
- Preheat Oven: Preheat your oven to 375 °F (190 °C) to prepare for baking the casserole.
- Cook Ground Beef: In a skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Once browned, season it with garlic powder, salt, and pepper for enhanced flavor. Drain excess fat if necessary.
- Steam Broccoli: Steam the chopped broccoli until just tender but still bright green, about 4-5 minutes. This helps retain its texture and nutrients.
- Mix Ingredients: In a large bowl, combine the browned beef, steamed broccoli, cream of mushroom or chicken soup, sour cream, and half of the shredded cheddar cheese. Stir everything together thoroughly to create a creamy, cheesy mixture.
- Assemble Casserole: Pour the mixture into a greased 9×13-inch baking dish and spread evenly. Sprinkle the remaining cheddar cheese evenly on top.
- Bake: Bake the casserole in the preheated oven for 20-25 minutes, or until the cheese on top is melted, golden brown, and bubbly.
- Serve: Remove from the oven and let it sit for a few minutes before serving. Enjoy your comforting ground beef and broccoli casserole!
Notes
- Swap in cauliflower for broccoli for a different, but equally delicious, variation.
- Add cooked rice to the mixture before baking for a more filling and hearty casserole.
- For a lower-carb version, use cream of mushroom soup with no added sugars and ensure sour cream is full fat or low carb.
- Optional: garnish with fresh parsley or green onions for added color and flavor.
