Description

Grilled Veggie Quesadillas are a delicious and easy vegetarian meal featuring smoky grilled zucchini, bell peppers, and onions combined with melted cheese inside crispy golden flour tortillas. Perfect for lunch, dinner, or a hearty snack, these quesadillas deliver a flavorful combination of smoky, cheesy, and fresh tastes that pair beautifully with salsa, guacamole, or sour cream.


Ingredients

Quesadilla Ingredients

  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack or cheddar cheese
  • 2 tablespoons chopped fresh cilantro
  • Salsa, sour cream, and guacamole for serving (optional)

Grilled Vegetables

  • 1 medium zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper


Instructions

  1. Preheat Grill: Preheat a grill or grill pan to medium-high heat to ensure it’s hot enough to cook the vegetables evenly and achieve nice char marks.
  2. Prepare Vegetables: Toss the sliced zucchini, red and yellow bell peppers, and red onion in a bowl with olive oil, chili powder, garlic powder, cumin, salt, and black pepper until all vegetables are evenly coated with the seasonings.
  3. Grill Vegetables: Place the seasoned vegetables on the grill and cook for 6–8 minutes, turning occasionally. Grill until vegetables are tender and have developed a light char for smoky flavor.
  4. Assemble Quesadillas: Lay two tortillas flat on a surface. Sprinkle half of the shredded cheese evenly over each tortilla. Distribute the grilled vegetables and chopped cilantro on top of the cheese, then top with the remaining cheese. Place another tortilla on top to form each quesadilla.
  5. Grill Quesadillas: Place the assembled quesadillas on the grill and cook for 2–3 minutes on each side, or until the tortillas are golden brown and crispy, and the cheese inside has fully melted.
  6. Serve: Remove quesadillas from the grill, slice into wedges, and serve immediately with optional salsa, guacamole, or sour cream for dipping.
