Ingredients

Cheese

  • 250 g halloumi cheese, cut into cubes

Vegetables

  • 1 zucchini, sliced
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes

Marinade & Garnish

  • 2 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp fresh parsley, chopped


Instructions

  1. Prepare skewers: Soak wooden skewers in water for at least 20 minutes to prevent them from burning during grilling.
  2. Make marinade: In a large bowl, whisk together olive oil, fresh lemon juice, dried oregano, paprika, salt, and black pepper until well combined.
  3. Toss ingredients: Add the cubed halloumi cheese and all the chopped vegetables into the bowl and gently toss to coat them evenly with the marinade.
  4. Thread skewers: Carefully thread the halloumi and vegetables onto the soaked skewers, alternating between each ingredient for an even distribution.
  5. Preheat grill: Heat the grill to medium-high heat, ensuring it’s hot enough to cook the skewers without burning.
  6. Grill skewers: Place the prepared skewers on the grill and cook for 3 to 4 minutes per side, turning regularly, until the vegetables are tender and the halloumi turns golden and slightly charred.
  7. Garnish and serve: Remove the skewers from the grill, sprinkle with fresh chopped parsley, and serve warm alongside lemon wedges or your favorite yogurt dipping sauce.

Notes

  • Cut the vegetables into similar-sized pieces so they cook evenly and finish at the same time as the halloumi.
  • Avoid grilling halloumi over extremely high heat; doing so can make the cheese tough and rubbery.
  • For added variety, try adding mushrooms, eggplant slices, or extra cherry tomatoes to the skewers.
