- 1 zucchini, sliced lengthwise
- 1 yellow squash, sliced lengthwise

- 8 oz mushrooms, halved
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
For Serving
- 1½ cups hummus
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon extra-virgin olive oil
- Lemon wedges
- Warm pita bread (optional)
Instructions
- Preheat the grill: Set your grill to medium-high heat, approximately 400–425°F, to prepare for cooking the vegetables evenly and achieving a nice char.
- Prepare the vegetables: In a large bowl, combine zucchini, yellow squash, red and yellow bell peppers, red onion, and mushrooms. Drizzle with olive oil and season with oregano, smoked paprika, garlic powder, salt, and black pepper. Toss everything to coat the vegetables evenly with the oil and spices.
- Grill the vegetables: Arrange the seasoned vegetables directly on the grill grates or in a grill basket if needed. Cook for about 3–5 minutes on each side, turning as necessary, until the vegetables are tender, slightly charred, and smoky.
- Assemble the platter: Transfer the grilled vegetables onto a large serving platter. Spoon the hummus into a bowl or directly onto the platter near the vegetables.
- Garnish and serve: Drizzle the hummus with extra virgin olive oil and sprinkle chopped fresh parsley over the grilled vegetables. Serve warm or at room temperature, accompanied by lemon wedges and warm pita bread if desired.
