Ingredients

Vegetables

  • 2 zucchini, sliced lengthwise
  • 2 yellow squash, sliced lengthwise
  • 2 red bell peppers, quartered
  • 1 red onion, cut into wedges
  • 1 bunch asparagus, trimmed
  • 8 oz (225 g) mushrooms

Seasoning

  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley
  • Lemon wedges, for serving


Instructions

  1. Preheat grill: Heat your grill to medium-high heat, preparing it for direct cooking of the vegetables.
  2. Prepare vegetables: In a large bowl, toss the zucchini, yellow squash, red bell peppers, red onion, asparagus, and mushrooms with olive oil, minced garlic, Italian seasoning, salt, and black pepper until evenly coated.
  3. Grill vegetables: Place the vegetables on the grill in batches. Cook them turning occasionally to ensure even grilling. Grill until the vegetables are tender and have developed lightly charred edges, about 8 to 12 minutes depending on the vegetable thickness.
