Ingredients

Marinade

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice

  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Main Ingredients

  • 1 1/2 lbs (680 g) large shrimp, peeled and deveined
  • 2 cups pineapple chunks
  • 2 ripe avocados, cut into large chunks
  • 1 red bell pepper, cut into chunks
  • 2 tablespoons fresh cilantro
  • Wooden or metal skewers


Instructions

  1. Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
  2. Mix Marinade: In a bowl, whisk together olive oil, fresh lime juice, minced garlic, honey, smoked paprika, chili powder, salt, and black pepper until well combined.
  3. Marinate Shrimp: Add peeled and deveined shrimp to the marinade, tossing well to coat evenly. Let them marinate for 15 to 20 minutes to absorb the flavors.
  4. Assemble Kabobs: Thread the shrimp, pineapple chunks, red bell pepper pieces, and avocado chunks onto the soaked skewers, alternating ingredients for a colorful presentation.
  5. Preheat Grill: Heat the grill to medium-high heat to ensure a good sear without overcooking.
  6. Grill Kabobs: Place the skewers on the grill and cook for 2 to 3 minutes per side, turning carefully, until shrimp are opaque and cooked through and vegetables have slight char marks.
