Ingredients
Marinade
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 2 garlic cloves, minced
- 1 tablespoon honey
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Main Ingredients
- 1 1/2 lbs (680 g) large shrimp, peeled and deveined
- 2 cups pineapple chunks
- 2 ripe avocados, cut into large chunks
- 1 red bell pepper, cut into chunks
- 2 tablespoons fresh cilantro
- Wooden or metal skewers
Instructions
- Prepare Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during grilling.
- Mix Marinade: In a bowl, whisk together olive oil, fresh lime juice, minced garlic, honey, smoked paprika, chili powder, salt, and black pepper until well combined.
- Marinate Shrimp: Add peeled and deveined shrimp to the marinade, tossing well to coat evenly. Let them marinate for 15 to 20 minutes to absorb the flavors.
- Assemble Kabobs: Thread the shrimp, pineapple chunks, red bell pepper pieces, and avocado chunks onto the soaked skewers, alternating ingredients for a colorful presentation.
- Preheat Grill: Heat the grill to medium-high heat to ensure a good sear without overcooking.
- Grill Kabobs: Place the skewers on the grill and cook for 2 to 3 minutes per side, turning carefully, until shrimp are opaque and cooked through and vegetables have slight char marks.
- Finish and Serve: Remove kabobs from grill, sprinkle with fresh chopped cilantro, and serve immediately with lime wedges on the side for extra brightness.
Notes
- Add the avocado toward the end of grilling or use firm avocado to prevent it from falling apart.
- Avoid overcooking the shrimp to keep them tender and juicy.
- For additional vegetables, add zucchini slices or red onion chunks to the skewers.
- Serve these kabobs alongside coconut rice, quinoa, or a fresh green salad for a complete meal.
